PART PREPARATION DISH

  • Brush ocean trout with olive oil and season skin with salt.
  • Heat frying pan or grill plate until hot. Add fish skin side down and cook until crisp and golden. Turn fish over and cook until golden underneath and still a little rare in the middle.
  • Meanwhile, microwave vegetables on high for 1 minute or until just heated through.
  • Spoon vegetables into centre of serving plate and place fish on top, skin side up. Spoon tzatziki over fish and enjoy.
